Purple Maize (Zea mays), originated approximately 2,500 years ago in Mesoamerica and is celebrated by many South American cultures today, especially in Peru. Beets often symbolize love or the heart and Roman legend claimed two people eating from the same root would fall in love. Purple Carrot (Daucus carota), is a root vegetable with a history dating back over 5000 years and is truly the original carrot—the common orange variety didn’t come along until the 17thcentury. Historically celebrated for centuries in Central Asia and the Middle East, it’s use spread to the West and the Dutch even fed it to cattle to enrich their milk and butter. A great source of beta carotene which converts to “provitamin A” in the body, it gets its purple color from anthocyanins and a phytochemical called rhodopsin, also known as visual purple.
